Pineapple Colada Puddings

I don’t know about you guys, but this weather we are having here in New York feels EXTRA this year!!! After a long winter and then CORONA hitting, it just feels even more glorious. The last several days I have spent outside with my girls and it’s been so nice for the change. My in-laws just opened the pool for us and this afternoon we are headed for a swim.

These puddings hit at the perfect time. They are the perfect summer treat!!! Originally the recipe is a vintage jello recipe, but I take it over the top and whip coconut extract into the whipped cream and once it’s folded in….well, just close your eyes and imagine your on a beach eating it because seriously it IS dreamy!!!!

I have been on a kick to find all the really great Jell-O recipes. I have a real love of Jell-O and all the things you can make with it. It’s endless and most of what I try end up to be pretty delicious. I think I love the texture of Jell-O desserts too. They are perfect sides and desserts! I hope you love this pudding as much as me!!

The bowls in this photo are a little big for the serving size of the pudding, so I ordered these and I am so excited, because they will also be great for trifle and all my summer jello reciepes!
