Shrimp Pasta Salad

1 pound small shell pasta – cooked according to package

1 pound small shrimp – cooked

Once your pasta had cooked, drain, rinse in cold water until the shells are cold. Shaking off any additional water. Place into medium size bowl. Add small shrimp.

1-1/2 cups mayo

2 teaspoons old bay seasoning

Splash of dill pickle juice

Squeeze OR a couple tablespoons dill relish

Salt & Pepper to taste

Combine everything into a measuring jug. Whisk until combined. Top with some to the pasta and shrimp. Remember you can always add more, but it’s hard to take away.

8 hard boiled eggs – cooked, shelled, cooled and cut into half.

Place half the cut eggs into the bowl of pasta, shrimp and dressing. Toss everything to combine. Decorate with the remaining hard boiled eggs. Chill until ready to serve. Serve cold. Happy Eating!
