Oh Monday!! My girls woke up at 5am today, so we have already done breakfast and first lunch and it’s only 10am! These early mornings are killing me. BUT I am so glad I get to share this recipe with you today!! It’s AMAZING!!!
I’m not a huge fan of chicken most of the time, it’s always dried out, bland and really isn’t that good. Last week I came across this recipe and it really is a game changer. I couldn’t stop saying how good it was. I made it a second time and gave some to my in-laws and they also said it was outstanding and asked me to make more. I now have a third batch in my fridge marinating.
The best way I could describe how this chicken tastes, is like the Southwest egg rolls and lettuce wraps from Cheesecake Factory. The flavor is really killer. BUT what takes it over the top for me is the dressing you also make from the marinade.
Technically the recipe was for a Southwest salad, but we’ve eaten everything with it, and I LOVE dipping the chicken into the dressing. My girls also eat it up, so that is another total win. This might be the best chicken I have ever made. My sister called me last night and even said “YES, that is amazing!”
