3 tablespoons salted butter
1 onion – diced
1/4 cup flour
1-1/2 cups chicken broth
1 cup milk
salt and pepper to taste
2 cups cheddar cheese
1 bag frozen diced potatoes or hash browns
1/2 cup sour cream – (I left this out, because my husband doesn’t like it, but my recipe from 20 years ago calls for it, and it is delicious with it)
Melt the butter in large pot over medium heat. Add onion and let soften. Stir in flour. Combine the chicken broth and milk. Whisk slowly into pan. Bring to simmer, simmer 5 minutes. Take off heat and stir in cheese. Mix with the frozen potatoes or hash browns. Finally stir in the sour cream – if using. Top with corn flakes or bread crumbs and more cheese if desired.
Bake 350° for about 45 minutes. Serve hot with your meal or for breakfast. Happy Eating.
