Spiced Cornbread

1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

2 large eggs

1 cup buttermilk

1/2 tsp baking powder

1/2 cup oat flour

1/2 cup all purpose flour

1 cup yellow cornmeal

1 tsp ground ginger

1/4 tsp cinnamon

1/4 tsp fresh grated nutmeg

1/8 tsp ground cloves

Preheat oven to 350°. Spray a 10″ Springform pan with cooking spray. Whisk together the melted butter and the sugar in a bowl until well blended. Beat in the eggs, and then the buttermilk and baking powder. Fold in the rest of the ingredients and mix until just blended, don’t over-mix. Pour the batter into the springform pan and even out. Bake for about 35-40 minutes until a toothpick inserted in the center comes out dry. Serve warm with butter and honey. This also is lovely with vanilla ice cream! Happy Eating!x
