Flourless Coconut Cake

6 egg yolks (keeping 4 of the egg whites)

2/3 cup sugar

Beat until smooth

50 ml oil

1/3 cup chocolate almond breeze

Stir into sugar and eggs

1/2 cup cocoa powder

120 grams dry coconut

Stir into mixture

1 tablespoon baking powder

Stir in

4 egg whites – whipped

Fold in egg whites

Use non stick spray and grease a spring form pan. Pour batter into greased pan. Bake 350° for 30-40 minutes. Remove and let cool. Release from spring form pan.

1 cup sugar

1/4 cup cocoa powder

Bring to soft boil. Whisking until sugar has melted and mixture is smooth. Thickens slightly. Let cool. Pour over cooked cake.x
