Last night I wasn’t sure what I was making for dinner. One thing led to the next and I just made this recipe up as I went along and this is what it turned into. We LOVED it!x

Fajita Lasagna .

3 Chicken Breasts – diced
1 green pepper – diced
1 onion – diced
1/2 package taco seasoning
Splash of water

Sauté over medium heat, chicken, pepper and onion until fully cooked. Add taco seasoning and a splash of water. Stir to combine. Set aside.

1 can green enchilada sauce
1 cup cream
Stir to combine

16 ounces mozzarella cheese
oven ready lasagna noodles .

Layer a few spoon fulls of the cream and enchilada mixture on the bottom of a 9×13 casserole dish. Top with oven ready lasagna noodles. Layer with chicken mixture, more enchilada sauce, and mozzarella cheese. Continue layering until your casserole dish is full. Preheat oven to 350• bake for about 30 minutes. Serve with garlic bread.
