With having two small girls, keeping up a property and my small pie business, dinner seems to be the last priority these days. So I am all about simple, quick meals, and these naan pizza’s were amazing!! So simple, quick and honestly I’ll never make pizza dough again! They are also a great light summer meal!! Serve with salad and you’ve got a perfect healthier version of pizza for dinner. And even my daughter loved them and wanted “more please!”
4 garlic naan slices (bread section of the grocery store) the garlic flavor makes them so yummy!!
Fontina cheese – grated – about 1 cup
Fresh asparagus
Fresh sliced Campari tomatoes
4 tablespoons Olive oil – divided
Place the naan on a sheet pan. Brush the naan breads with about 1 tablespoon olive oil, between the 5 of them. Place about 1/3 cup of grated fontina cheese on top of the brushed olive oil. Then layer a few sliced tomatoes, and asparagus. Bake 425° for about 7 minutes. Then broil for about 2-3 minutes. Watch it close so it doesn’t burn. Top with arugula and drizzle with balsamic vinegar. Serve warm.

I also made traditional pepperoni naan’s. Layer a small amount of rao’s pizza sauce, mozzarella cheese, and pepperonis. Bake as directed above.

Some fresh arugula on top of the fontina, tomato and asparagus would be delightful. Even a drizzle of balsamic!!! Yum!!! I might have to make this!!x
