Hazelnut Flour Cookies

Keeping a horse farm (with no horses, yet!) and farmhouse running on top of my husbands job and my small business is a busy life! Not to mention raising 2 tiny kids. Once the good weather hits some week nights and almost every weekend is work. Our backs ache and our stomachs are hungry. Sunday’s we rest and I usually always make cookies. They just taste so nice and warm out of the oven! These hazelnut cookies did not disappoint AND they are gluten free!!

6 tablespoons butter – room temp1/2 cup brown sugar

1 egg

1 teaspoon vanilla

2-1/2 cups hazelnut flour – bobs red mill

1/2 teaspoon baking soda

1/2 cup chocolate chips

sea salt

Preheat oven to 375°. Line a cookie sheet with parchment paper or a non slip mat. Cream together the butter and sugar. Add in the egg and vanilla until smooth. Add the hazelnut flour and baking soda. Scoop onto cookie sheet. Bake until lightly brown and golden around the edges. About 10 minutes. Melt the chocolate and drizzle over baked cookies. Sprinkle with sea salt. Happy Eating!!x
